Gingerbread Waffles (GF, vegan)





Yum yum!

DELICIOUS GINGERBREAD BELGIANWAFFLES! Perfect for festive winter mornings. Not pictured: I also made these with a Disney Frozen snowflake-shaped Belgian waffle maker that I got for Christmas, and it was phenomenal.

WAFFLES:

1 cup teff flour (or use some all purpose GF)
¼ cup coconut sugar
1 teaspoon baking powder
1 teaspoon cinnamon
1 teaspoon ginger
½ teaspoon nutmeg
¼ teaspoon allspice
¼ teaspoon clove
¼ teaspoon xanthan gum (optional)
¼ teaspoon salt
⅓ cup coconut milk
1 large egg (or 1 flax egg, which is what I used)
2 teaspoons vanilla extract
3 tablespoon agave nectar
3 tablespoon melted coconut oil
      ---> combine ingredients, waffle-ize in your favorite waffle maker (Belgian worked very well)

GLAZE: 

1 cup coconut sugar (powdered, if you want to be picky about consistency)
1 tablespoon coconut milk
1 tablespoon lemon juice
¼ teaspoon vanilla extract
     ---> whisk together. You can also mix these ingredients by taste.

The Best Chocolate Cookies in the Universe


Note: sandwiching with mint chocolate chip ice cream only makes the best even better.

Best in the Universe? --prove me wrong, I DARE YOU.

They're fudgey, chewy, soft, gooey, crinkley, sweet, and delicious.  (And grain-free, gluten-free, sugar-free, dairy-free, of course.)

Recipe can easily be doubled for twice the aweseomeness.

THE RECIPE:

Prep:
- toast 2 3/4 c chopped walnuts:  spread them on a baking sheet and place in a 350 degree oven, shaking sheet occassionally, for 8-10 minutes.  Watch carefully to make sure you don't burn them.

- separate 4 large eggs, saving the whites **

- powder 3 cups coconut sugar:  I used a magic bullet blender for this, powdering small amounts at a time.  A Vitamix could probably handle all of it at once and save considerable time.  I put ~1/2 c at a time in the bullet with a pinch of tapioca or potato starch each time, and blended until powdered. Adding starch helps create the 'powdered' consistency.

- locate parchment paper or silicone baking mats to line cookie sheets before dropping cookies.

- heat oven to 350 degrees

[** save those yolks and make some Gluten Free Pasta!! It's no coincidence that a double cookie recipe takes 8 whites, and a double spinach-pasta recipe takes 8 yolks..... :) ]


THE ACTUAL RECIPE:

1/2 c plus 3 tbs cocoa powwder
3 c powdered sugar
pinch of salt
2 3/4 c walnuts, toasted
4 large egg whites, at room temperature
1 tbs vanilla

Combine the cocoa powder, powdered sugar, salt, and walnuts - beat on low for 1 minutes.

With the mixer running, slowly add the egg whites and vanilla.  Beat on medium for 3 minutes, until the mixture has thickened slightly and looks lumpy. Do not over-mix, or the eggwhites will over-thicken.

Use a 2-ounce cookie/ice cream scoop (or let's be honest... a normal spoon) to scoop that batter onto the LINED cookie sheets.  Space cookies about 3 inches apart.

After placing cookies in the oven, immediately reduce temperature to 320.  Bake 15-20 minutes, rotating pans font to back and top to bottom halfway through. (note... this entire step is optional, but is included in the original recipe, and would probably would help for optimal results.)

Pull parchment paper with cookies onto a cooling rack and cool completely before moving cookies.

Gluten Free Pasta Verde, Homemade

Red & Green - this was my Christmas dinner.

 This is an adaption of the previous recipe that I posted on homemade GF pasta. It basically subs pureed spinach for some of the egg, and ends up being bright green! The taste doesn't change very much, so it's still good with a variety of sauces. I've preferred to keep it simple, and top it with a few grape tomatoes sauteed in olive oil, garlic powder, red pepper flakes, salt, and black pepper.

While we're on the subject of olive oil, I highly recommend Trader Joe's Spanish Olive Oil. It is fragrant and rich, not at all bitter, and everything that an EVOO should be! Get it.

I used my Cuisinart pasta maker for this again. I've tried it with the fettuccine dye, as well as the angel hair one. Worked great with both!

When I've made this, I've done a double recipe, and bagged the leftovers to feed myself for the next 10 dinners or so.  Below is the doubled version, because it's easiest to sub the spinach for one whole egg. To make less, I would sub the weight of one egg yolk for equal weight of spinach puree.

THE RECIPE: (feeds ~8) - (or more, if you're me)

6 oz garbanzo bean flour
6 oz millet flour
6 oz potato starch OR tapioca starch/flour
2 tsp psyllium powder
2 pinch nutmeg
2 tsp salt                           -----> combine dry ingredients (mix them in bowl of pasta maker)

1 L egg
8 L egg yolks*
5 oz fresh spinach leaves    -----> blend eggs and spinach until spinach is pureed. Slowly add to dry mixture and blend.

1 tbs oil (maybe)
1 tbs water (maybe)          -----> after your egg/spinach mixture is fully incorporated into the dry ingredients, evaluate the consistency of your dough.  It should be naturally clumping into walnut-sized chunks. (Although the moisture of the spinach may make it ball a bit more than usual- that is okay.)  If the dough resembles cornmeal, it is too dry.  If this is the case, add up to 1 tbs oil, and re-evaluate. This should be all you need- however, if you find it is still too dry, add up to 1 tbs water.  Get those walnut-ish chunks, one way or another.

Then, follow the instructions on your pasta maker to extrude the noodles. You should also be able to do this by hand-- google elsewhere for detailed instructions on how to do that.

Cook in a very large pot of boiling water for just a few minutes.  Fresh pasta cooks VERY quickly-- and overcooking it will make the noodle structure and shape fall apart. (aka, still tastes good, but looks crummy.)  It always finishes more quickly than I expect!

Top with some olive oil, salt/pepper, or your favorite sauce. Enjoy!

* STAY TUNED for the dessert that is the PERFECT PAIR to make with or soon after this pasta...... because it uses 8 egg whites! So, it's pretty much a requirement that you make them one after another.  Just don't explode from deliciousness overdoes when you do.

Gluten Free Pasta: Homemade

Yeah,  that's right. I made this meal for Girl's Night, and shared it with my non-weird-diet friends! Also.. disregard the overcooked (aka, flattened) ziti.  Still tastes awesome!

My new favorite meal is homemade gluten free pasta.  I have a Cuisinart pasta maker that mixes the dough and expels it out of a die, which makes the whole process super simple.  It should be possible to roll out the dough and cut strips without a pasta maker, too.

I've been using THIS recipe from GlutenFreeGirl. (Scroll down to the recipe in the box.)  I've use garbanzo bean flour instead of garbanzo-fava, and also tapioca starch instead of potato starch.  I did use a baking scale to measure by weight for the flours.

I usually have large eggs (not extra large, as the recipe calls for) at home, so the second time I made the pasta I used 4 egg yolks from large eggs, and 2 large eggs-- it came out the same.  Either way, just adjust the oil and water amounts if it ends up too wet or too dry.

Seriously, this pasta is delicious.  I eat it with some Spanish olive oil, salt, pepper, and a little basil. --Delish!

Conte's frozen gluten free potato gnocchi.  Cooked up in under 10 minutes... I don't get insta-meals very often, so this was awesome. Pretty darn good, too!

Maple Walnut Pie


One again... ate 90% of it before a photo could be taken..... :)

Happy Thanksgiving! This is a festive pie that I actually made for a pre-Halloween pumpkin carving party.  It was delicious, and I liked that it was less traditional than your typical pecan pie. (and also... walnuts are cheaper than pecans! :) )


Crust:

1/2 c + 3 tbs millet flour
1/2 c garbanzo bean flour
1 tbs potato starch
1/8+ tsp salt           ---> combine dry ingredients
3 tbs ghee              ---> mix into dry ingredients to make velevety consisitency
3 tbs ghee              ---> mix coarsely to form pea sized balls
~1 tbs ice-cold water   ---> drizzle in, gently mixing until dough forms into a ball

Roll out for a 8.5" pie pan (8 or 9" would work too) on waxed paper. Place the pie pan upside-down on the rolled dough, and use the waxed paper to flip the crust into the pan. Repair any cracks that may form, then crimp edges
Prick bottom and sides of pastry with fork. Line edges of crust with double thickness of foil. Bake 8 minutes at 450 F.. Remove foil, them bake 5 minutes more or until crust is lightly browned cool. Reduce oven to 350 F.


Filling:


1.5 c maple flavored agave (or maple syrup, if you can eat it)
3 eggs
4 tbs ghee
2 tbs coconut oil
1/3 c coconut sugar
1/4 c erythritol (or more coconut sugar)
2 c chopped walnuts, toasted
1 tbs vanilla
1/4 tsp nutmeg
2 tsp tapioca flour


Beat eggs until thick and lemon colored, ~5 minutes. Add ghee/coconut oil (softened), beat in. Add all other ingrdients and mix, then fold in walnuts. Pour into crust. Bake on baking sheet for ~45 minutes, or until middle just begins to set but edges are not burned. If edges seem to be cooking too quickly (browning) before middle begins to set, turn temeprature down slightly.  Cool before serving.


Tastes like a cross between a pecan pie and maple stick donuts. :)

Magic Cookies Bars


Magic! (cookie bar)




Magic cookie bars (also known frequently as Seven Layer Bars-- although I'm nver quite sure what the 7th layer is... maybe the pan?!) are one of the first desserts I learned to make by myself. The original recipe came from an EagleBrand Sweetened Condensed Milk can. I remember layering the graham cracker crumbs, melted butter, sweetened condensed milk, chocolate chips, walnuts, and coconut flakes on many a late-night dessert-making spree, often accompanied assisted by friends, and often followed by gobbling up the whole pan while watching movies and gossiping in my basement.




Fast forward to now, and my current recipe is really just as easy to make and just as delicious to eat. (I may or may not have eaten it for breakfast all week... which actually worked great!) Benefit over the traditional version: no crushing graham crackers. Downside: spreading marshmallow fluff is a pain. Either way, they're still easy and worth it.

THE RECIPE:

Layer in a baking pan: (8x8, or 9x13)


Uncooked.
crust, in 2:2:1 ratio - almond meal, flaxseed meal, coconut sugar
melted coconut oil - add to crust, mix with fork until consistency is gooey but not wet, and covers entire bottom of the pan
vegan marshmallow fluff (I get mine at WholeFoods) - spread (or rather, lump/drizzle on) until it more-or-less thinly covers the whole pan
chocolate chips - use ~10 oz to cover the whole area
chopped walnuts - again, sprinkle or spread over surface
shredded coconut - sprinkle over surface


By now the chocolate chips, walnuts, and coconut should have entirely covered the gooey fluff layer-- thus, you can use your hands to gently press all along the top layer to compact the layers together. 


Heat oven to 350 and bake until chocolate is melted and coconut begins to toast - around 20 minutes.

Chocochip Cookies

MmmMmmmmmm, choco chips!!!

Amazing chocolate chip cookies: yes, this just happened.

In college, Frist Campus Center used to have the most amazing, soft and gooey chocolate chip cookies- they were by David's Cookies, and were one of the highlights of pre-ACD campus life.

I haven't eaten a genuine chocolate chip cookies since then! In place, I just guzzle Sunspire grain-sweetened chocolate chips straight from the bag. But, a couple weeks ago, I was inspired to make a David's quality ACD-friendly chocolate chip cookie recipe, and because I'm awesome, I succeeded- in taste, texture, and deliciousness!!


THE RECIPE:

4 tbs ghee
4 tbs coconut sugar
2 eggs
1 tsp vanilla

2 tbs oat flour 2
1 tbs millet flour 1
1 tbs tapioca flour
3 tbs teff flour
1  tbs brown rice flour
1 tsp baking powder
1/2 tsp salt
1/4 tsp guar gum
1/4 tsp cinnamon
dusting stevia
2 tbs + 5 tsp flax seed meal

~1/2 10oz bag of Sunspire

Cream eggs and coconut sugar; add ghee and vanilla. Seperately combine dry ingredients and stir well; slowly add dry ingredients.

Cook for ~15 minutes at ~375. Makes about 20 cookies.

Also, I ate them all before remembering to take a plated picture. :)

Chocolate Raspberry Truffle Cake

My birthday was a couple weeks ago, and I made myself a cake.


Back in the day, when I wanted to make something truly decadent, I used to look up recipes on the Godiva chocolate website (they have a great gourmet recipe selection). Birthday desserts, boyfriend desserts- Godiva had me covered for all of 'em. So, I decided to take on the challenge of adapting a truly decadent chocolate cake recipe.

Also influencing my inspiration- around this time for the past 4 years was Lawnparties at my eating club in Princeton. This involved an enormous brunch with just about every type of gourmet cake / tart imaginable... and thus resulted in a total deterioration of my diet, for at least a couple days. Obviously I had to make a substitute for that experience, too.

So, I present, the best cake EVER, and of course, gluten-free, sugar-free, dairy-free.
I also submitted this recipe for the Daily Dietribe's Gluten-Free Birthday Cake Challege (awesome).

Chocolate Raspberry Truffle Cake

Preheat oven to 350 degrees. Grease a round (~9 inch?) springform pan.

LAYER 1: Dense Chocolate Cake

¾ c ghee/coconut oil mix
1 c coconut sugar
¼ c light agave          ---> heat on stove until melted and well-mixed; whisk together/stir continuously. Let cool slightly.

2 eggs
2 tsp vanilla    ---> after wet ingredients cool slightly, whisk in eggs and vanilla




2/3 c flour combination: oat, all-purpose GF, brown rice, millet, tapioca
¼ tsp guar gum
½ tsp baking powder
½ tsp salt
½ c cocoa powder    ---> combine dry ingredients in a bowl, then add them to the wet ingredients. Mix well. 
Pour batter into springform pan, and bake ~30 minutes, or until toothpick inserted into center comes out clean. Let cool in springform pan.

 
LAYER 2: Raspberry Layer

2 c rapsberries
1 tsp powdered chia seeds
½ truvia packet
Stevia dusting       ---> combine all ingredients. I used about half frozen raspberries and half fresh raspberries.

LAYER 3: Chocolate Truffle Ganache Layer

1 c canned coconut milk (the more thick/fatty, the better)
10 oz Sunspire chocolate chips

1 tsp vanilla                           ---> heat coconut milk until hot. Pour over chocolate chips, add vanilla, stir until all chips are melted/smooth consistency is obtained. Let cool slightly.

ASSEMBLY:

After cake layer has cooled, (leaving it in spring form pan) spread a thin layer of truffle layer on top (so that raspberry layer won't make cake soggy). Next, spread on raspberry layer. Finally, top with truffle/ganache layer. Place in fridge to chill.


Before serving, remove sides of spring form pan.
Keep chilled before/after serving, or top layer will "sweat."

Hope you enjoy this delicious treat! Everyone's response to it was "I love how buttery the cake tastes!" And I said, "well, there's no butter in it!" Oh, the magic of quality ACD baking! :)

Orange Sweet Rolls: Pillsbury Style


These are one of my favorite things ever! Easy to make in advance, then pop in the oven for a special brunch. I slightly improved the dough from my cinnamon rolls, and topped with a delicious fresh orange glaze.

THE RECIPE:

The Dough:


½ c tapioca flour
½ c potato starch
¾ c arrowroot powder
¼ cup brown rice flour
1/4 c millet flour
½ tsp salt
1 ½ tsp guar gum
2 tsp baking powder            
1 tiny stevia-scoop stevia

3 tbs coconut oil (melted)
2 ½ tbs agave
1 tsp vanilla
2 eggs                           --> combine wet ingredients; whisk in egg; add wet to dry


1/4 c almond milk    -->  add milk slowly, until it is dough consistency (a little sticky is ok.)

If dough is too sticky, dust with brown rice flour until it does not stick to your hand/spatula when touched.

--> Tape a sheet of waxed paper down onto a counter/table. Dust with brown rice flour. Place dough in the center, and use a (floured) rolling pin to roll out to ~¼ (or thinner) inch thick rectangle.


Filling:
2 tbs coconut oil (softened)
4 tbs coconut sugar
2 tbs cinnamon
2 tbs agave                        
                   ....or basically any combination of the above ingredients (leaving out the oil works fine too!)

--> Wisk together all ingredients until combined. Use a rubber spatula to spread filling over entire rectangle of dough.

Untape the waxed paper under the sheet of dough. Begin rolling dough “hot-dog style” (AKA, roll the long side, to make a thin, long roll) by lifting the waxed paper and gently coaxing the dough into a tight roll. Since the part of the roll is the tightest, starting it is the trickiest, and after that you can just left the waxed paper and let the log of dough roll on its own.

If making the dough in advance, tape the waxed paper around the log of dough, put plastic wrap around the open ends, and place in the fridge overnight. When ready to bake them, place the roll on a cutting board, and slice into ~1-inch thick rounds. Arrange them evenly spaced in an 8-inch round cake pan. Dough will expand as it cooks, so it's fine if there's extra space in the pan.

Heat oven to 350, and bake for ~30 minutes. Dough will still be soft when it comes out (don't bake until it's hard! 30 minutes max should do it). After removing from the oven, let cool in pan for ~5 minutes (ie, while you make the glaze!).

Glaze:

1 orange
1 tbs agave (preferably "light" agave)
1 tsp ghee, softened
1 tsp chia seeds (to help thicken it)
orange zest (from the rind) to taste (~1/8 tsp)
dash salt (if needed)               ----> puree in blender/food processor (Magic Bullet!)

Let glaze sit for a couple minutes to let the chia seeds work their thickening magic. Then, spread over all rolls in the pan.

Dig in and enjoy the anti-pillsbury deliciousness! (no disrespect to my guy the Doughboy)

It's.... INTERNATIONAL WAFFLE DAY!!! (March 24)



 
and it's time to celebrate!  (I'm posting this a bit in advance, to give ample inspiration for waffley breakfasts tomorrow.)

What a wonderful week. A supermoon, the first day of spring, warm weather, two best friends' birthdays, and International Waffle Day on March 24.

Not gonna lie, I've been waffling all week in anticipation. Monday night I made cinniteff waffle sandwiches with pizza sauce, cheeze, and mixed greens on them. I also came to the discovery that (at least in my belgian waffle maker, with cinniteff waffles) thinner batter makes soft, flexible, moister and lighter waffles, whereas thicker batter (which is what I usually do for breakfasts) makes crispy belgian-style waffles. I liked the lighter option for dinner, when I want proportionally more protein and less carbs. So keep that in mind!

Also, I ran out of teff flour Monday. Which led me to create the above-pictured Goldi-squares Stairway to Waffleheaven #Winning Waffles. We'll just call them #WinningWaffles for short..... (TIGERBLOOD!!!!)

They pretty much are amazing. Light, faintly sweet but still neutral flavor allows for unlimited possibilities. Such as:

PIZZA WAFFLE!!!! huge success. I used Bridgford Turkey Pepperoni, and Prego VeggieSmart sauce. yum.


OMG  it's a WAFFLEDONUT. okay not really, but that's what it tastes like. Just sprinkle on top: Organic cocoa powder, coconut sugar, and shredded coconut. And it tastes like a chocolate powdered sugar donut! Slash some kind of intensely amazing pastry delicacy.


So, for the substrate behind all this madness:

THE RECIPE:

1 egg
1 tbs extra light olive oil  ---> whip together until a bit frothy
up to 3/4 c almond milk
1 tsp vanilla
5 drops stevia
1.5 tbs millet flour
1.5 tbs garbanzo bean flour
1 tbs Bob's Red Mill All-Purpose GF Flour
1 tbs coconut powder (ie, finely shredded coconut/coconut flakes)
scant 1/8 tsp salt
1/2 tsp baking soda     ----> mix all together, pour into [belgian] waffle iron and WAFFLE IT UP!

Ghee (or coconut oil) it after it's off the iron.

Happy St. Patrick's Day!

 ... and Happy Pi Day- also belated. I've had a lot going on (see bottom of post), so sorry for not getting these up on time!

Leprechaun Pudding with Gold-Chocolate Crumbles!
 
Creme de Menthe Pie

Irish Soda Bread!

1. Lepruchaun Pudding with Gold-Chocolate Crumbles

 Pudding:

1 banana
1 generous handful spinach
2 tsp vanilla   ---->  puree in magic bullet until smooth


2 tbs walnuts
2 tbs raisins
1 tbs cocoa powder
dash of salt   ----> pulse in magic bullet until it clumps
 
Pour pudding into a bowl and top with chocolate crumbles. It tastes light and sweet-- you can't taste the spinach at all, but it adds a healthy punch (which also makes this recipe very breakfast-eligible!)

2. Creme de Menth Pie (aka Grasshopper Pie)


So, making this didn't end up going as smoothly as I had hoped.

I was going off of this recipe from pure2raw, but ended up adding WAY too much guar gum..... which turned my filling into rubber. So, whatever you do, do NOT add two tablespoons of guar gum to two avocados and expect edible pie filling. Seriously-- it almost broke my Bullet!

That being said, I worked for about two hours trying to salvage the filling, and I finally got it to a delicious flavor and "acceptable" consistency-- still all but too rubbery for me to really be satisfied. Nevertheless, all three of my taste testers stated it tasted just like the "real" version that my mom made.

So, since I was in "salvage mode" as I threw together ingredients, I didnt' record much. If you're interested in making this pie, I recommend going from the pure2raw version, with the possible modification of adding lemon juice to the avocado layer (helps reduce browning, too!) The color of the pie did start out avodaco-green, but slowly began to brown after some fridge-time.


Crust: (delicious!):

1/4 c walnuts
1/4 c coconut powder/flakes
1/4 c raisins
1 date, chopped
2 tbs cocoa powder
1 tbs vanilla      ----> pulse in Bullet until powdery/clumping, then press into bottom of 6 inch pie pan


Garnish layer: (yummy but not minty) -- this is the dark green layer on top and bottom

1 banana
1/4 c yacon powder (kinda gross)
stevia/agave to sweeten
vanilla (will darken color)
little bit of spinach, purreed/juiced, to green it up 
almond milk to thin to desired consistency     ---> puree it all until smooth


Main filling layer:

2 avocados
1/2 tbs guar gum? start low and add more! (2 tbs = rubber, fyi)
2 tsp peppermint oil
2 tsp vanilla
1 tsp lemon juice
almond milk to thin if guar gum over-rubberizes
agave to sweeten
   ... aaaand a pinch of Irish luck that it works easily!      ----> puree in Vitamix/Bullet/whip together by hand


White whipped meringue layer:

1.5 tbs coconut oil, softened (I used the non-coconut-y kind)
1.5 tbs ghee, softened
1/2 c erythritol, powdered
if needed, almond milk to thin to desired consistency    ----> blend in Bullet until creamy and smooth

Assembly: On top of crust, spread half of Garnish layer, then freeze to harden. Next, pour in all of Main filling layer, freeze again. Cover with the rest of garnish layer or white layer to prevent browning; alternately, use both to decorate. Perfect taste is definitely attainable, even if consistency may be a bit more challenging!

3. Irish soda bread!    
        
Now THIS is an epic win. Epic, I tell you-- EPIC! Way better than my mom's breadmaker Irish soda bread (probs cuz I made mine sweeter!), and definitely the best ACD bread I've ever made. It's almost like a coffee cake, but still bread-y enough to be eaten with dinner (Irish stew, which we had yesterday!)


THE RECIPE:

2 cups gluten-free flour blend:
         1/2 c oat flour
         1/2 c brown rice flour
         1 cup mix of: garbanzo flour, amaranth flour, all-purpose GF blend
1.5 tablespoons agave (or to taste)
2 teaspoons baking powder
1 teaspoon baking soda
¾ teaspoon xanthan gum
½ teaspoon salt                     
1 tsp cinnamon
1/4 tsp nutmeg                              ----> stir together dry ingredients
2 tablespoons coconut oil            
2 tbs ghee                                    ---->cut, then pinch fats into dry ingredients to obtain a sandy texture
½ cup raisins                                ----> fluff into the mixture
¾ cups buttermilk:                        ----> add to dry ingredients to form dough
          1.5 tbs apple cider vinegar
          scant 3/4 c almond milk ----> let mixture sit 10 mins

(Batter should taste delicious (almost cookie-like) on its own too!)

Preheat oven to 400. Add extra flour until dough is kneadable, then knead a few times on waxed paper sprinkled with (oat/rice) flour. Shape into a 6-inch loaf on a greased cookie sheet and slice an 'X' on top with a knife. Bake in oven for 20-30 minutes. Yum!

So, I said I've had a lot going on-- most recently, one of our two cats passed away two days ago, after 19 years of being our faithful friend. (This dampened our St. Patty's festivities- hence the late posts!)

When I was five years old, my sister and I each adopted a kitten. My sister picked a lively black and white kitty, which she named Misty Moonmew Oreo. I picked a friendly orange tabby, who I dubbed Starry Crystalmew Peanut. Misty and Starry were our best companions, and grew up beside us for the greater portions of both of our lives.

Coming up upon their twentieth birthdays (July 13), both cats have been slowing down, but still happy and enjoying life. Misty began fairing a little worse, and she had a noticeable lump on one side of her abdomen. She was active and spunky up until the afternoon of March 16, at which point she laid down on her special chair cushion- and never did get up. She faded for a few hours, occasionally appearing to have minor seizures or spasms of her arms and legs. We stayed with her right up until the end, and are thankful that she did not suffer long. She was cremated today at a special pet facility, and at this point we plan to keep her ashes in a cat-shaped urn, in the home that she loved so well.

Misty was lively and smart, and always was the first one to the door to greet company. She had flair: loved to eat cooked broccoli, raw tomatoes, strawberries, grapes-- we called her a 'little human.' She was fascinated by running water in the shower, and thus was also our resident 'hydrologist.'  On her black face she had a white diamond marking on her nose, and a little white beauty-mark dot.

As my sister put it, "We're not kids anymore- Misty's dead!" and indeed, it is a whole new concept to be without one family member. I'm thankful for the time that we had with her and for her companionship throughout the years. RIP Misty!

Switching gears to a happier tone: I returned from my week-long trip to Carnival in Trinidad on Sunday. It was AWESOME, and my month or raw-dieting sure paid off while I was strutting my stuff in my skimpy costume! Here are some shots from the fun:
